Phu Quoc fish sauce on way to foreign markets
Ha Noi (VNA) – Unilever Viet Nam is expanding export of fish sauce or “nuoc mam” produced in Phu Quoc Island, off the south-western province of Kien Giang after gains made in two choosy markets; the US and Canada. This speciality has great export potential, said Greg Sullivan, Vice President of Unilever Viet Nam, adding that his company has recently put its Knorr-branded fish sauce made with 100 percent natural materials on the market.
Unilever Viet Nam annually sells 6 million litres out of 12 million litres of fish sauce trademarked Phu Quoc and produced on the island to domestic and foreign markets.
With its long coastlines, Viet Nam boasts many fish sauce producers but Phu Quoc is the most famous, made from the long-jawed anchovy caught in waters surrounding the island, the sauce has a delicate flavour and high levels of protein.
According to Nguyen Thi Tinh, Chairwoman of the Phu Quoc Fish Sauce Association, to make a top-grade fish sauce like the Knorr Phu Quoc, islanders use only fresh black anchovies, natural ingredients and traditional storage methods unchanged for centuries.
To get a certificate of origin (C/O) for the Phu Quoc fish sauce, local producers have to follow all production processes regulated by the fisheries sector and the fish sauce must be made and bottled on the island, she said.
But the brandname could be threatened by a shortage of raw materials, the association has warned. Annually, islanders need 250,000-200,000 tonnes of anchovies to produce 10 million litres of fish sauce. However, today they can only buy 70 percent of the volume of anchovies they need due to shortages caused by uncontrolled catches.
To ensure sustainable development of traditional fish sauce industry, Tinh said the fisheries sector and producers must join forces to protect anchovies and build up a professional production method.
One positive step towards this goal is the establishment of the Phu Quoc Sea Reserve, she added.
Not only popular among Vietnamese who consume around 200 million litres of the stuff each year as a dipping sauce, Phu Quoc fish sauce has also become a popular souvenir for tourists to the beautiful island.
The Phu Quoc fish sauce is one of the first two Vietnamese products granted C/O in May 2005. The other is the Shan Tuyet Moc Chau tea.-Enditem
